Trattoria Fresco

Nine tables.  This is such a local place they renamed it Caf? Marco after the Chef Owner Marco Franceschini, from Florence, Italy.  It is simple with Italian Painting with a night-tone of color, which soothes, not over-stimulates.  Ross is the richest town in Marin.  Everyone knows Sean Penn has a house here.  If you are coming from the East Coast, say New York City, I would visit Ross for the sheer Ross of it.   To come to Trattoria, you arrive in Tuscany and invite anyone to prove otherwise! 

Vegetarian Chef's tasting is extraordinary from first bite-yea, Ross wakes up after your first of Chef Owner Marco.  It's 8 years old and it is engraved in an opulent enclave where most residents have private chefs. 

Everything organic, the bread is made here and I am taking some back to my hotel to have with my breakfast.  The cuisine is so good here, it makes you close your eyes to check if you are dreaming.  Abundance is the way it's supposed to be?and you get that natural abundant feeling at what the locals call Caf? Marco.  The edge goes in to poise and you find yourself not demanding yourself, just enjoying and being; I repeat myself to dissipate any unwanted doubts. 

Pasta Fagioli, organic is yum yum.  Winter busters warm wines by the glass, or order a bottle.  The menu is constant with surprises when Marco becomes inspired, and from what I gather is often.  The ravioli, you know you arrived, no pun intended?this is as Italian as you are going to get.  You must  give a man huge credit not being on his birth soil and staying true to his roots, and sharing this love open-mindedly-Grazie Mila Marco.

Catering depends-very exclusive, perhaps a friend, acquaintance, or someone who knows him.  Marco is a talented chef who has been practicing and perfecting his art since he was a boy. 

A:  "Marco, if you had one bottle of wine to choose, what would it be?"
M: "Brunello di Montalcino 2000"

There are pasta dishes on the menu, all unique; keep in mind it was hard to get an answer about the wine 'cause he said he picks wind according to personality and mood-fair enough.  Marco speaks softly and firmly like a man who has a happy life and knows what he enjoys.  Everything as least environmentally is under-stated, under-stated.  The restaurant has been given over to private parties many times and yea, I would have a party here.  Marco's staff consists of 1 tonight.  Sous Chef and Maureen, the waitress who is apple-pie perfection as you will get.  Maureen keeps Trattoria fresco grounded along with the blue blood Rossinians old-guard, otherwise I am in Tuscany?culinary delight. 

Marco's culinary talents only he can know, each man and woman's dedication yields its secrets.  Desert - Panne Cotta?sweet thoughts, lets sing and dance.  Hours of operation: Tues-Sat 5:30pm to whenever.
